WThis is a simplified interpretation of a drink featured on our latest drinks list. It's a batch pre-mixed that's packed full of flavours of the holiday season, making it ideal for your celebration. Reserve the remaining syrup for brunch beverages, sweets, or for more rounds of this cocktail.

The Bikini Cocktail

Makes enough for 10 servings

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Instructions

For the Cordial: Put all the ingredients in a pot, bring to a light boil, stirring so the sugar melts. Next, take off the burner and leave to cool down entirely. Transfer into a sterilised bottle, seal and store in the fridge, it can be stored for around a month.

Preparing the Cocktail Base: Mix all the liquids into a big jug, leave to sit for one hour, then strain preferably using cheesecloth, so it's completely strained.

When ready to serve: Measure 85ml of the cocktail base into a mixing glass containing ice, and stir lightly for about 60 seconds to cool it down. Filter to a frosted cocktail glass or equivalent, garnish with some cranberries and finish using a light spray of mandarin oil above the glass.
